Cape Byron Distillery
Cape Byron Distillery is a project born from a couple’s love of nature. In 1988 Pam & Martin Brook planted over 35,000 subtropical rainforest trees in a rundown dairy farm in stunning Byron Bay.
Taking inspiration from the abundance of unique edible native plants from his rainforest, Martin honed his skills from his time as head distiller at Bruichladdich in Scotland to produce awe inspiring Brookies Gins; giving birth to Cape Byron Distillery.
