Description

This dessert-style Iced Sauvignon Blanc is a beautifully balanced end-of-dinner number from Bass River.

The grapes were hand-picked mid-autumn when sugar and acid levels were at their finest. After being cooled, crushed and pressed, the juice was chilled to form little ice blocks on the surface of the wine, which were then removed. After 35 days of concentration, the batch was split in half so some could ferment to achieve a balancing dry quality. The halves were then blended together and bottled.

The resulting flavour is reminiscent of Moscato florals and fruits with a touch of gooseberry. The sweetness is balanced by a lash of citrus and medium acid, leading to a bright wine with beautiful length.
